Why Don't You Get REAL Soy Sauce With Chinese Food Takeout?

Have you ever compared the ingredients from Soy Sauce in a bottle, to the packets you get from a Chinese food takeout place?
If you've ever wondered why the little packets of soy sauce taste a little different from bottled soy sauce, just compare the ingredients. The most obvious difference is one conspicuous ingredient: Soy.
I'm not exactly sure why, but every Chinese takeout order I've ever taken home comes with packets of "Soy Sauce" that doesn't taste quite like the Soy Sauce you get from a bottle, and it seems to me that the most likely reason is the substitution of "Vegetable Protein", for actual soy.
I realize that "Vegetable Protein" is ambiguous, and could potentially contain a variety of vegetables, such as lentils... or even soy, but today's ingredients are required to disclose any potential allergens, such as wheat and soy. Takeout packets, contain neither, and that means they are clearly different.
